Great Machine

"Great Machine"

It takes a little practice

"It takes a little practice to draw off a perfect espresso, and a very good cappuccino. I think I’m at the point where I have learned to do both! Quite an espresso machine!"

My dream lever machine (military retirement gift)

"My wife bought this for me, and though I’m still learning how to not pull sour shots, the fun is in the research and experimentation. One really needs the time and desire to learn all the variables you can control when making espresso with a lever machine. I’m a manual transmission only kind of guy. So, I now am learning to roast my own beans (over propane flame using stir-pop), have a manual Comandante grinder, and now a manual lever La Pavoni. It’s been a week, and I finally found a bean, a roast, a grind, a tamp presssure, an extraction ratio, and a method of pulling to produce not a bad tasting shot! Success!!! Oh and use mineral water. The machine is beautiful, the wood handles feel great, and I especially like the open bottom portafilter to watch the extraction in real time. Fantastic! It heats up in 5-10 minutes, so that was a plus compared to another brand of manual lever machines."
