When coffee is picked, it is not the brown little bean most people see on their grocer’s shelves. It is green and bitter, and it is not desirable for consumption. Coffee is roasted to a certain degree to discharge some of the chemicals and to engage others that make coffee the enlivening source of pleasure it becomes.

Some coffee is roasted at the source and shipped as roasted beans. However, this practice has slowed in recent years as individual cafes and large roasters want the original green bean so that they can roast it to their desired specifications. The beans are roasted to maximize flavor and aroma. The roast level, chosen by the roast master determines what characteristics exist in the roasted coffee.

It is also desirable to roast the beans after they have arrived at their destination because they have a shorter shelf life after they have been roasted. The bean is cracked in the roasting process and it can go stale if not used within a certain time frame.

The roasting process is also conducted at the site where the fresh roasted bean will be packaged so that the roast master can see the product packaged and handled appropriately. The beans are guaranteed to have a specific flavor, depending on the roast and only the roast master can certify that it has reached the proper temperature.

It is grown high on the big island of Hawaii amid the volcanoes and ocean breezes. Nothing will remind you of Hawaii more than a fresh cup of Kona coffee.

  • Organic Peruvian Chanchamayo – the coffees grown in Peru receive the mountain flavor that can only be found in the Andes. This coffee is of medium body and has a great acidity that enhances the fruitiness of the cup. A great midday or dinner coffee.

  • Costa Rican Terrazu – Costa Rica is one of the best growing regions in the world because it has the volcanic soil, the ocean breezes and the climate needed to produce a great coffee.
